How to make vegetable soup

1 diced potato
┬╝ cabbage cut into strips
1 chopped medium onion
1 finely grated carrot
1 tomato cut into cubes
5 parsley sprigs + 5 cilantro sprigs bound together
2 cups frozen peas
1 red pepper cut into cubes
1.5 tablespoon of chicken broth
2 tablespoons olive oil
2 liters of water
A little salt and pepper

- Heat the oil in a frying pan and cook the onion for 3 minutes on a large heat
- Add the carrot, cook for 3 minutes and turn off the heat
- Boil water in a pot (3 / 4 full) on a large heat and then add the potatoes and cabbage
- When the water boils again, add the red pepper and chicken broth
- Reduce the heat and cook for 10 minutes
- After 10 minutes add the peas and the cooked onion and carrot
- Add a little salt and pepper, tomatoes, parsley and cilantro and cook for 5 more minutes
